Braised Venison

3 pounds venison
Oil
1 1 / 2 cups beef broth
1 / sec 2 cup white wine or red
5 carrots, cut into 2-inch --
3 sticks celery, cut into pieces 3 inches
3 potatoes, quartered, then halved
Salt and pepper to taste

Preheat oven to 350 degrees. Mix 1 / 3 cup flour, 1 / 2 teaspoon salt, 1 / 4 c. Tea pepper, 1 / 4 c. Tea garlic powder and 1 teaspoon parsley. Coat meat with flour mixture and in a Dutch oven. All sides in a little oil. Add broth, wine, and stir the remaining flour and mix. Cover and cook the meat about 1 1 / 2 hours. Add vegetables and cook for one hours.

(I marinate venison in buttermilk overnight before you do something with it.)
